Exploring Culinary Artistry at Cornish: An Interview with Cody Rogers, General Manager of Nellie’s Cafe

At the heart of Cornish College of the Arts, where creativity thrives and artistic exploration knows no bounds, there’s one place that captures the spirit of community and artistic collaboration through food: Nellie’s Cafe. Managed by Bon Appétit, a dining service known for its commitment to fresh, sustainable, and diverse culinary options, Nellie’s is led by General Manager Cody Rogers, who has been the driving force behind this culinary haven for the past two and a half years. We sat down with Cody to learn more about his journey, culinary philosophy, and the special role that food plays at Cornish.

Q: What inspired you to bring your culinary talents to Cornish, an arts-focused college?

I’m passionate about creating dishes that challenge and expand people’s tastes. For me, it’s about introducing students to foods beyond the classics like chicken tenders and french fries. At Cornish, I get the unique opportunity to inspire young adults who are just beginning to explore and shape their identities. Teaching them to try and appreciate global cuisines is such a rewarding challenge—it’s why I’m here.

Q: How do you see food as an art form?

Food is the perfect blend of science and art. It’s all about applying scientific principles to create something visually appealing and delicious. Like any art, it has the power to spark conversation, create a sense of belonging, and build community. Being able to express this in an arts college allows us a bit of creative freedom, which is wonderful.

Q: Can you tell us about the pop-up dining events at Nellie’s? Any memorable collaborations?

One of the most memorable pop-ups has been with lsidro’s, a vendor that’s a favorite among students. lsidro’s offers traditional Oaxacan food, which resonates with me personally because I’m from Southern Arizona, and it reminds me of home. It’s also part of our larger mission to support local, small businesses. It’s not just about farmers and ranchers but also about building partnerships with local culinary talents.

Q: How do you accommodate the diverse tastes and dietary needs of such a varied student body?

It can be challenging given the size of our cafe, but that’s why we change up the menu daily while keeping some favorites. We also listen to student feedback. Right now, our menus reflect what past students have loved, and we’re looking forward to learning what new students want to see. It’s a continuous process of incorporating everyone’s preferences.

Q: If you could host a dream dining event at Cornish, who would you bring, and what would be on the menu?

If I could pick anyone, it would be my idol, Marco Pierre White. He’s known for his culinary talent and unapologetic approach to food. I’d love to challenge him to elevate traditional Mexican cuisine with French techniques—perhaps octopus with Central American influences. It would be a fun way to blend our styles and celebrate our craft.

Q: What role does food play in bringing the Cornish community together?

Food is a staple of connection; it’s how we come together as families and friends. Dining at Nellie’s is a way for students to gather, share, and create memories, just as they would around a table at home. It’s a part of building their sense of community here.

Q: If Cornish had a signature dish, what would it be, and why?

Hands down, it would be the butter chicken. While chicken tenders and fries will always have a place, the butter chicken is universally loved here. It’s flavorful, inclusive, and meets most dietary needs. There’s just something timeless and comforting about it that resonates with everyone.
